Wonderfully easy and delicious recipe for fresh pear cake. We bought a box of mixed fruit from our local boyscout troup several weeks ago and the pears where about to get overly ripe. I guess my family likes apples and oranges but nobody is too keen on pears for some reason. What better way to use up the fruits then to bake a cake with them.

Mix the cut up fruit with sugar and let weep. The batter consists of egg whites, melted butter, flour, baking powder, salt, nutmeg, cinnamon and pecans, add the pear and sugar mixture. The whole thing can be stirred together with a fork. Bake for 1 hour and 10 minutes and voilá, you have a delicious, moist cake everybody will love.
